Orkney is famous for its wide open clear skies and with that comes the most beautiful sunsets. I think the medium of watercolours lends itself to this particular subject very well. I usually use the watercolour technique of 'wet on wet'. This consists of wetting a stretched piece of dry watercolour paper with a light wash of clear water. Then add in your paint while the paper is still wet and using the light colours first. Then build the colour up in layers at the same time as not allowing the paper to dry out unless of course you want to have harder marks in your'e image. I usually cover all of the paper with the sky and add in the foreground when the paper is dry.
